The head shop of Tenka Ippin, the ramen chain built on kotteri, a soup of chicken bones and vegetables so thick the company calls it a soup you eat rather than drink. Founder Tsutomu Kimura started with a street cart in 1971 and spent 3 years and 9 months getting that soup right. The cart became this shop, the chain's first, in August 1975.
